Japanese company Asahi Sake Brewery decided to try brewing sake in space.
The first experiments will take place on the Japanese module “Kibo”, which is part of the International Space Station (ISS). 520 g of moromi (sake starter mixed with rice-based mash and rice malt) will be fermented in space and brought back to Earth in a frozen state. The raw material will then be pressed and bottled in 100 ml bottles. The product will be called Dassai MOON - Space Brewing.
The Kibo module was chosen because it has the ability to simulate conditions similar to the Moon's gravity (1/6th of the Earth's gravity).
